Chocolate banana bread cupcakes

Ingredients :

– 1/2 cup milk of choice. i used drinking coconut milk – 1/2 cup mashed overripe banana – 3 1/2 tsp coconut oil – 2 1/2 tsp pure Vanilla Extract – 2 tsp Apple cider vinegar – 3/4 cup flour of choice. i used Wholemeal Spelt Flour – 1/2 cup granulated sugar of choice. i usee coconut sugar – 1 tsp stevia Extract – 1/4 cup cacao powder – 1/2 tsp baking powder – 1/2 tsp baking soda – 1 pinch salt – 1/2 cup chopped walnuts. Optional

Method :

1.

Preheat oven to 350°F. Line 12 muffin tin holes.

In a medium bowl mix banana, oil, vanilla, and vinager. Set aside for 5 min.

In a large bowl combine all remaining ingredients and stir well.

Pour wet into dry and stir until evenly mixed.

Portion the batter evenly among muffin tins. Add to oven and bake for 20 to 25 min. Until toothpick inserted into the center comes out clean

6.

Place on a cooling rack and allow to completely cool.
