Gingerbread cookies


  • 2 1/4 c flour
  • 1 tsp baking soda
  • 2 tsp ginger powder
  • 115 g butter at room temp
  • 3/4 c. brown sugar
  • 2 tbsp. maple syrup
  • 2 tbsp. molasses
  • 1 egg


1. Mix the dry ingredients together and put aside.
2. In a mixer, blend the butter with brown sugar well. Add the syrup and molasses. Add the egg and beat well until the mixture is fluffy. Add the flour mixture and blend slowly to combine. Wrap the dough and keep to rest in fridge for an hour. Roll the dough and cut as desired. Bake in a pre- heated oven at 350 for 12-15 min
3. Makes between 30-50 cookies depending on cookie size. NB. These cookies freeze well when baked. You can take out and decorate a couple of days before Christmas Day.
