A really good staple recipe! I’ve used this recipe over and over again and it’s never failed me.
- 375 ml flour
- 125 ml sugar
- 125 g margarine
- 125 ml milk
- 2 eggs
- 2 ml salt
- 10 ml baking powder
- 5 ml vanilla essence
- 400 ml icing sugar
- 125 g margarine (for icing)
Preheat oven to 180’C and grease a muffin pan or line with cupcake liners.
Whisk the sugar and margarine. Add the eggs and whisk well.
Sift the dry ingredients. Mix the milk and dry ingredients with the egg mixture until smooth. Add the vanilla.
Pour the batter into the pan and bake for 18 minutes. Let cool.
Whisk the icing sugar and margarine together until smooth. You can add any color food coloring! 🙂 Pipe neatly over cooled cupcakes. Decorate with sprinkles.
